Hello hello my dear readers.  Spring is finally upon us and that means a bounty of yummy fresh produce is headed our way! So this past Saturday I braved the rain (ok, drizzle) and drove to the Athens Farmers Market to explore all the new fruits, veggies, and treats for sale.  After grabbing a coffee, I perused the vendor’s tents until a flash of red caught my eye.  Sitting on top of a crate was a small but beautiful ruby-red bouquet…of radishes.

French Breakfast Radishes w/ Parsley, Butter, & Bread

You’re probably thinking, What’s so special about a bunch of radishes? Well, radishes happen to be one of my favorite veggies, and these particular radishes are pretty hard to find in supermarkets. In contrast to the red globe radishes found in popular grocery stores, these French Breakfast radishes are smaller, thinner, and milder. And, they go perfectly on a slice of fresh French bread with parsley, butter, sea salt, and cracked black pepper.

So I enthusiastically coughed up the money, drank all my coffee, and drove home hyper-caffeinated to make one of my favorite snacks- French Breakfast Radishes w/ Parsley, Butter, and Bread. It’s a traditional French snack that’s light and fresh and very quick to make.

French Breakfast Radishes w/ Parsley, Butter, & Bread

Radishes w/ Parsley, Butter, and Bread 

Serves 2 as a snack

Ingredients
4 french breakfast radishes(or other kind of radish if preferred), washed and leaves removed
4 slices french bread
at least 1 tbsp unsalted butter, room temperature
1/2 cup roughly chopped flat leaf parsley
sea salt and cracked black pepper

Instructions
1. Slice the radishes very thinly into discs (almost translucent-thin if possible)
2. Spread the butter on the bread slices and top with parsley. You can mix the two together beforehand if preferred.
3. Arrange the radishes on top of the parsley & butter.
4. Top with a pinch of sea salt and cracked black pepper.
